Tortilla’s with guacamole
– 2-3 green chillies to taste
– 2 limes
– 3 avocados
– sea salt and black pepper
– 12 flour tortillas
– 1 large bunch coriander
– 1/2 bunch thyme, leaves picked
– 3 lugs extra virgin olive oil
Preheat the oven to 200 degrees Celcius. Meanwhile, remove and discard seeds from chillies, squeeze juice from limes, peel avocados, remove stone and chop, chop coriander.
To make guacamole, mash chillies, lime juice, avocado and coriander until creamy but chunky. Season with salt and pepper. Pour into serving dish.
Brush tortillas with oil, season, sprinkle with thyme. Lay on baking tray and bake 5 mins. until golden. Leave to cool. Break in wedges and serve with guacamole. Yummy!
